Meatless Corned Beef Hash with Scrambled Eggs
It's been a minute since I shared a recipe, so I thought I would share one of my current favorites - Meatless Corned Beef Hash with Scrambled Eggs! We love corned beef hash in this house. Like LOVE love. But it's greasy and doesn't always make us feel the best plus we are looking to cut back on our meat consumption, so finding a suitable replacement for this weekend standard was a must. Now I will be the first to admit that this recipe isn't as cheap as a can of corned beef hash is, but it won't weight you down while still keeping you full for hours.
(While this is meatless, it's not vegan or strict vegetarian, however you can feel free to make swaps as your dietary lifestyle requires. I bet it would be just as good with scrambled tofu! Also, I don't like hard and fast recipes. They are zero fun to make. I do however like guidelines for my creations so I don't forget an important element. Don't think of this as a hard and fast recipe, but instead guidelines to make it awesomely yours!)
1 tbsp butter
1 tbsp olive oil
Half bag frozen hash brown potatoes
1 8oz package of Beyond Burger patties (2 patties)
Seasonings (salt, pepper, garlic powder, onion powder, Worcester sauce, etc.)
4-6 eggs, beaten
Melt butter and oil together in large skillet over medium high heat. Add potatoes and press into flat layer. Flip after they begin to brown. When almost done, push to side of skillet. Add burger patties in empty space and break up into bite sized pieces. Add seasonings to patties and stir to combine. Allow to brown on all sides and then mix into potatoes. Move everything back to one side and turn heat down to medium. If you need it, add about 1/2 tbsp of butter and allow to melt. Add eggs and scramble until done. Serve eggs over hash.
