Winner Winner 10 Minute Chicken Dinner!
Living the spoonie + full time worker + wife life means I am often looking for ways to maximize my time any way possible. And that means utilizing shortcuts in the kitchen to get dinner on the table fast when all of a sudden I realize it's 9 PM and we still haven't eaten.
Today I am sharing one of my 10 minute meals that is delicious, filling, perfect for 2 adults, and uses the microwave to do all the heavy lifting. Also, this meal is gluten-free! (Or it was the last time I made it, always double-check the ingredients to be safe.)

10 Minute Chicken Dinner
You need 1 package each:
Bourbon Brothers Premium Cuts Garlic Parmesan Chicken
Reser's Fine Foods Main St. Bistro Roasted Sea Salt & Black Pepper Potatoes
Canned or Frozen Green Beans of Choice (or other veggie of choice - broccoli, peas, salad, all make great sides to the rest of the meal)

Canned or Frozen Green Beans of Choice (or other veggie of choice - broccoli, peas, salad, all make great sides to the rest of the meal)
First you microwave the potatoes according to the package, then the chicken according to the package. The green beans can be heated on the stove during the cook time of the other two dishes or if you are using steam-in-the-bag beans, you can cook them before the potatoes and let them sit in the bag until just before serving to keep them nice and hot.
That's it! Seriously.
Once it's all hot, dig in. Again, this feeds 2 adults and is gluten free. It is pricey with 2 prepackaged items, but it's cheaper and better than fast food for 2, so it's a solid alternative for busy weeknights.
